So, who knew that two of my resolutions would be helped along yesterday? First of all, I met two of the most delightful girls yesterday while IR went to her first ballet class. We started talking and I found out that one of them is the president of the Coastal Runner’s Club. The other was also an avid runner and excited to give me all kinds of great info about upcoming races and other things to be involved in. So, join a runner’s club? Check–plan to be there on Saturday at 8:00 AM!
Secondly, I mentioned that I wanted to cook fresh and fun foods. Tonight Mrs. Chef Mosley brought out the spatula and BAM–made fresh fish! Is it terrible to admit that this is the first fish I have cooked all on my own?

Depending on how big your filet is, cut the fish into individual serving portions. Place in baking container and add a small slice of butter on top.
See? One for Chef, Mrs. Chef and the two children. Bake on 350 for 18-22 minutes depending on thickness of filet.
When fish has 5 minutes left, add chopped tomatoes and shredded parmesan. Use a fork to flake the fish to see if finished baking.
Serve with green vegetable and half baked potato. I was all set to blog about the kale chips I made, but they ended up not being our favorite. Trial and error, right?
PS: my children actually ate the fish! I left off the tomatoes and put those on the side. Ketchup may or may not have been used for a dipping sauce….
