Crockpot Oatmeal and More

Hope you all are having a wonderful 2013!  I can’t believe it’s almost February, definitely overdue on my goals for the New Year.

After an amazing week of rest and relaxation, my goal has become very simple.

Do NOT worry about tomorrow.  Be PRESENT.

Seriously, I could list a million goals for myself, but this year will be one of changes and blessings.  Potential new positions for Brandon, kids growing by the minute, and a sweet baby boy on the way will make our year complete.  I have stayed up many hours wishing, waiting, and anxiously praying trying to figure out the next steps.  But honestly, we are commanded to have faith, love each other, and trust in the ONE who created us.  Will I still plan?  YES!  I do plan to kick off my Personal Training business, in the Fall, stay fit through this pregnancy, decorate the house, play with my kids, love my husband, get more involved in our church, and be a new mommy too.  The difference is, I hope to lay those desires down in prayer, each day, and be PRESENT.  Scratch the worry, take ownership of PEACE.  (Will you all remind me of this when I am up at 2 AM with a newborn?)

In an effort to plan and not worry, I made the most delicious breakfast that was waiting for me this morning….

Crock Pot Cranberry Oats

  • 1 & 1/4 cup of Steel Cut Oats
  • 4 cups of water
  • Two handfuls of dried cranberries (craisins could work too)
  • Two handfuls of slivered almonds
  • 2 or 3 tbsp of plain or vanilla greek yogurt. (This depends on how creamy you like your oatmeal)
  • Cinnamon across the top.  I did not measure but literally sprinkled all the way across the pot.
  • Set on low (10 hrs was my setting).

My house smelled delightful as I woke up this morning.  I started my crockpot around 10 pm and checked the oatmeal at 6:30 am.  It was tender and delicious.  If you do use plain greek yogurt, you will want to add additional seasonings when ready to serve.  The vanilla Chobani flavored mine perfectly along with the cinnamon.  AND, I have a piece of tupperware filled with additional servings!

  3. This looks so yummy! I’ve seen an apple pie crockpot oatmeal recipe floating around on pinterest, butthis looks delicious too! Now I have two to try.
