I think my husband likes that his cooking is featured on this blog. How do I know this? Well, he sent me an email last night with the recipe from dinner and the nutritional value, too!

- Saute 2 TBSPN Olive oil and a inch of crushed or minced garlic
- Add 1 serving of frozen cut bell peppers, cook for 5 minutes (frozen bell peppers compliments of Trader Joes)
- Sprinkle with Old Bay seasoning, or cayenne and black pepper (spicy)
- Add 8 peeled and deveined shrimp, cook until pink (We buy the frozen bag from Publix)
- Cook 1 serving of instant grits in microwave per instructions on package
- Add 1 serving shredded cheese to grits when done, stir to melt cheese
- Place grits in a bowl or plate, and top with shrimp / pepper mixture
- Sprinkle with paprika

What’s your easiest meal to “throw” together?







cheryl, my go-to meal is chicken breast with montreal chicken seasoning, sauteed in EVOO. then remove from pan, then i use 32 oz of Kitchen Basics chicken stock, pour in same pan used to cook chicken (don’t wash the pan) pour in 2 cans of artichoke hearts (cut in half), cut up roma tomatoes, add olives (optional) sprinkle a generous portion of reduced fat tomato basil feta cheese, let it simmer to thicken up for about 6-8 minutes then place the chicken back into the pan and cook for another 3-5 mins to heat the chicken through. you can either serve with pasta or rice – i’ve used the DeBoles organic spinach spaghetti pasta that’s made with jerusalem artichoke flour. making me hungry as i just typed that out!!!
