Happy Day after Easter!

Oh I crack myself up!

We had such a wonderful weekend.  Low key, yet filled with fun.  And of course, we attended an incredible Easter service.  No, we didn’t make it to the sunrise service on the beach, BECAUSE it was 35 degrees and gray.  There is only so much cold this Southern girl can take!

One of my other favorite activities was serving at the Great Bay Half Marathon.  I feel very blessed to be associated with an active Running Club called Coastal Athletic Association.  They are constantly supporting and encouraging people to get out in the community and MOVE.  Not only do they fill the races with runners, they staff water stations and provide “cheering” sections for their runners.  (A group of us will be going down to the Boston Marathon next week to cheer on some of our own!)  ANYWAY, Coastal needed people to staff a water stop at the Half and we volunteered our family.  The kids has a blast handing out water and gatorade, shaking the cow bells, and cheering the participants on.

It was awesome to SERVE and to serve as a family.  To ENCOURAGE and not be the star of the show.

I have tried lots of brands of Greek yogurt, but Chobani is by far my favorite!  Fresh fruit, no preservatives and twice the protein.  Yes, it does have a little bit of sugar, but all Chobani products are made with NATURAL ingredients!  My family is a believer and I think you will be too.

My top flavors..hmmm–definitely the Apple Cinnamon and Blood Orange.  Oh, but then there’s the Pineapple, Mango, and Passion fruit too.  Yikes-too many to choose from.

It feels like Easter

Hey friends…

Such a big weekend coming up for many reasons.  Mainly because, for our family, this is the reason for our faith.  We are Alive, because of Easter Sunday.  As we focus on that, we also celebrate Spring, bunnies, flowers, Easter Egg Hunts, and more.  Yesterday, IR and I had a blast decorating our house for the weekend.  And as always, we try to decorate on a budget AND with limited time.  So, yes, you can do these projects too!

2 Recipes you MUST try…

Just got back from an awesome Zumba class and am staring  into the blue skies here in Portsmouth.  Looks like it’s warm, but actually only about 45 degrees.  Guess that is warm for here?!  Don’t even want to hear about the 80 degree temps in my hometown. :)

 

B has been traveling, so I got to eat whatever I wanted for dinner last night.  Gotta love those nights.  I ate my favorite meal of the day: breakfast for dinner!

Just had to share my Heavenly Oatmeal:

  • Old Fashioned or Rolled Oats
  • 1 Egg
  • Soy Milk, Organic milk or milk of your choice
  • Cinnamon
  • Agave
  • Splash of water
  • Dried Apricots (from Trader Joe’s of course)
  • Apples-chopped up

Pour oats into a sauce pan.  Add milk, just enough to cover the oats.  Then add a splash of water for more liquid.  Stir in the egg and bring mixture to a boil.  Turn down the heat and cook until oats are starting to turn fluffy.  Add apples and apricots, cinnamon and splash of agave.  Continue to stir until all or most of the liquid is absorbed.  I usually make enough for another meal …so yes, I had this again for breakfast.  Seriously the best oatmeal I have ever made!  The egg makes all the difference!

 

And a follow up to a past post:

Last week I posted about a Granola that we should all try….myself included.

This took me a total of 20ish minutes to prep.  It baked for 45-50 minutes and we had snacks/breakfast for 5 days.  I couldn’t stop eating it, so sadly it is all gone now. Anyway, it was delicious and such a great option instead of sugary grocery store granola.  Take a minute to read the Granola Post and print out the recipe.  Or feel free to Pin it!

Quality over Quantity

Hi guys:

Wow, life is getting busier.  We are settling in.  God is opening doors.  I am thankful.

This blog has been an incredible outlet for me.  When I had nothing to do and not many to talk to, Live Fit helped me have a voice.  No worries, I am not giving up the blog, but cutting back the amount of time I spend behind my computer.  Guess you could call it, Quality over Quantity.  When I come across a great recipe, awesome fitness workout, fun Mosley detail or encouraging idea-I will write.  That could be daily or it could be a couple of times a week.

I am very blessed to have met some GREAT people in the last 2 months that are giving me some new opportunities.  BodyPUMP training is complete and I am getting ready to video my class and submit it for final certification.  Hopefully, I will soon get a class of my own (like in the next couple of months).  Until then, I am continuing to train and attend other classes.

We also were introduced to a fantastic family, at our church, and the wife is a manager of a Barre/Yoga Studio.  Coincidence?  I don’t think so!  Anyway, they “happen” to be looking for Barre instructors-can you believe that?!  I started training with them this week.  Check out the studio-it’s gorgeous!

I  have broadened my Zumba horizons and joined forces with Jubilation, a Zumba studio here in Portsmouth.  It is a great place with people that woo-hoo!  Love it and feel blessed.

Lastly: Did I mention my main job of Mom?  These kiddos are adjusting beautifully to NH and I don’t want to miss a moment with them.

Sounds like a lot doesn’t it?  It’s not too much, but definitely enough to get me out from behind my computer in the mornings!

Foodie Penpals

Look at what was waiting for me when I got home from GEORGIA!!

Since joining twitter and following some great Healthy Living Blogs, I became introduced to Foodie Pen Pals.  Lindsay, over at The Lean Green Bean, has done a fantastic job of putting together this program.  Over 350 foodies, fitness fans, and bloggers gave their info and were compiled into a spreadsheet.  Each one of us was assigned a “pen pal” to send a box of goodies to.  In return, a different pen pal would send us a fun package of their goodies!

Lindsay, from Colorado Springs, sent me a box full of goodies that I LOVE:

  • Spring Cookie Cutters (how fun for the kiddos and me)
  • Larabars (she has seen my addiction)
  • A local Granola mix
  • USAT Magazine (she works for the company–what a cool job!)
  • Swim Cap (from USAT)…she even took the time to read my blog and see my races!

Now, here is who I got assigned.  Are you ready for this?
Atlanta girl, 2 children, runner, fitness enthusiast, son with allergies, and has also endured some of the same losses as I have.  Can you believe it???  We have had a great time emailing back and forth.  So check out Lisa’s blog and follow her race recap from the weekend!  Way to go, Lisa!

It’s Restaurant Week..

It’s Restaurant Week here in Portsmouth, so I thought I would post several food ideas this week at Live Fit.  Hope you have already checked out the snack ideas posted the last couple of days.

B was traveling last night, so a “Girlie Salad” made the menu.  You know, the one with fruit in it?

Summer Salad (inspired by Cooking Light)

  • Lettuce (Living Lettuce is my favorite)
  • Orange
  • Grapefruit
  • Avocado
  • Lightly breaded chicken (especially for the kids)
  • Balsamic Dressing (or dressing of your choice)

My kids were not pumped about the salad which led me to make kid friendly chicken to go with it :)

Chicken (2 Breasts fed the 3 of us)

  • Heat skillet with olive oil
  • Cut Chicken Breast into strips or pieces
  • Dip each piece into egg mixture (egg and splash of milk)
  • Then dip into Panko Bread Crumbs
  • Place in skillet and cook until done (depends on thickness of slices)

Pretty easy: Chop all fruit and place on lettuce.  Add chicken and you will have a delicious and healthy meal!

For the kids: the plate was separated out:

  • Bowl of Citrus Fruit
  • Lettuce with dressing
  • Chicken served like little nuggets

Something to try

Have I made this?  No, but Brandon swears it is the best Granola EVAH.  Remember,  granola (in the bag) can be loaded with sugar, so it is best to make it yourself.  Here’s OUR homework (yes me included).

Granola Recipe (from International Delights Catering)

  • 1/3 C Light Brown Sugar
  • 1/3 C Canola Oil
  • 1/3 C Honey
  • 1 TBLS Black Strap Molasses
  • 3 C Rolled Oats
  • 1 C Whole Uncooked Almonds
  • 1/3 C Pumpkin Seeds
  • 1/3 C Black Flax Seed (maybe regular would be fine too?)
  • 1/3 C Sesame Seeds
  • 1/3 C Sunflower Seeds
  • 1 TSP Vanilla
  • 1 TSP Chunky Sea Salt

Heat oven to 300.  Line in a large rimmed baking sheet with parchment paper, then spray with cooking oil.  Mix nuts, oats and sea salt.  In a pan, over low heat, combine oil, honey, brown sugar and molasses.  Coo, until warm to the touch.  Remove mixture from heat.  Add vanilla to the mixture and mix well.  Pour warm mixture over nut and oat mixture.  Stir well.  Pour entire mixture onto baking sheet, pat out flat and bake at 300 for 45-60 minutes (or until golden brown).  Remove from oven.  Let the granola cool.  Break up and store.

Not an Almond Fan?

Nuts-they are a true source of protein.  But the cocktail peanuts are not what I’m talking about.  And, well, plain almonds are kinda boring….

Almond Snack:

Mix together:

  • Almonds
  • Sea Salt
  • Olive Oil
  • and topping of choice: cinnamon, sugar, or even pepper
  • Place on foil (on a cookie sheet) and bake for 10 minutes at 350

Delish, easy, and healthy.  Little b even had a bowl of these at lunch!
