Just got back from an awesome Zumba class and am staring into the blue skies here in Portsmouth. Looks like it’s warm, but actually only about 45 degrees. Guess that is warm for here?! Don’t even want to hear about the 80 degree temps in my hometown.
B has been traveling, so I got to eat whatever I wanted for dinner last night. Gotta love those nights. I ate my favorite meal of the day: breakfast for dinner!
Just had to share my Heavenly Oatmeal:
- Old Fashioned or Rolled Oats
- 1 Egg
- Soy Milk, Organic milk or milk of your choice
- Cinnamon
- Agave
- Splash of water
- Dried Apricots (from Trader Joe’s of course)
- Apples-chopped up
Pour oats into a sauce pan. Add milk, just enough to cover the oats. Then add a splash of water for more liquid. Stir in the egg and bring mixture to a boil. Turn down the heat and cook until oats are starting to turn fluffy. Add apples and apricots, cinnamon and splash of agave. Continue to stir until all or most of the liquid is absorbed. I usually make enough for another meal …so yes, I had this again for breakfast. Seriously the best oatmeal I have ever made! The egg makes all the difference!

Last week I posted about a Granola that we should all try….myself included.
This took me a total of 20ish minutes to prep. It baked for 45-50 minutes and we had snacks/breakfast for 5 days. I couldn’t stop eating it, so sadly it is all gone now.
