Best NE Date Night…

So, the date nights are slim pickins around here when you don’t know any babysitters…however, you can always do a date night in. (For those of you with children, I strongly recommend having an evening to yourselves–even if it begins after 8:00).

Two nights ago, Chef Mosley surprised me by coming in with great local purchases from the fishmonger and a local wine shop.  He said, “Just relax, I have dinner tonight!”  This is music to a girl’s ears, especially one who has been cooking a lot lately.

Another side note: if you are looking for an easy and healthy dinner choice, check out fresh fish—it is DELISH and great for you!!  (For those of you from my home town, Whole Foods has a gorgeous seafood counter).

Here was our delish dinner:

  • DayBoat Haddock (more about this later)
  • Fresh Broccoli
  • Local White Wine (a blend to compliment the fish)

Ingredients and Preparation

  • 2 Fresh Haddock Filets (this means NO fishy smell)
  • Flour
  • Bread Crumbs–Panko is best
  • Salt and Pepper
  • Paprika
  • Lemon–Fresh
  • Olive Oil

Make sure fish is cleaned and rinsed.  Place 1/2 to 1 cup flour on plate, mix salt, pepper, paprika into flour.  Spread bread crumbs on plate.  Dip filet into flour covering both sides. Dip filet into eggs. Dip filet into bread crumbs.  In a medium to large pan (depending on size of filets) bring enough olive oil to coat the bottom to medium heat.  When oil is hot, place breaded filets in oil.  Cook approximately 5 minutes per side.  The coating should be a nice golden brown.  Remove from pan and plate (paper towel on top of plate to soak up excess oil).  Garnish with lemon wedge and enjoy!!
