Just a couple of ideas for you as you head into the weekend.
Tired of deli meat sandwiches? I was looking for an lunch options while shopping at Trader Joe’s. Always been a sucker for black bean burgers and went on the hunt in the freezer section. No BB burgers in sight, but veggie burgers caught my eye.
I skeptically chose Dr. Praegers California Veggie burgers. I mean how good can a frozen burger made of veggies be? Hmmmm
Directions say:
Broil 8-10 minutes on each side until browned. Easy enough!
I placed a slice of cheddar cheese on one side during the last two minutes. Then added my avocado spread from yesterday. Bring in Udi’s bread and a touch of honey mustard—DELISH!
So let’s recap that one more time:
- Dr. Praegers CA Veggie Burger-broil 8-10 minutes each side
- Slice of cheddar cheese (last 2 minutes)
- 2 slices of Udis Bread
- Avocado spread
- Lettuce
- Honey Mustard

You probably laughed at my rice cake and Almond Butter idea the other day, BUT the kiddos tried it today and LOVED it! (fyi: I buy the brown rice cakes, but get the caramel flavor) Today I decided to join them and even spruce mine up a bit:
Added dried apricots to the top of mine (of course from TJ’s). The perfect sweet and salty combination!!!
